That is exactly how this soup makes me feel! I wasn’t sure I’d love it, but thought I’d give it a try…and now I can’t get enough of it! It has the perfect amount of sweet and spice to it, and it’s loaded with nutrition. The options for this soup are endless; add extra ingredients that you especially love, add a green apple for sweetness or extra salsa to give it a bit more kick, whatever suits your preference! It can also be doubled or quadrupled if needed.
I made this a hearty meal by cooking up a mahi mahi burger to enjoy on the side. A perfect summer lunch!
- 1 avocado
- 1 cucumber
- 2 handfulls spinach
- 2 stalks celery
- Juice from 1 lime
- 1/2 c green salsa (I found mine at Trader Joe's)
- 1/2 c water
- 1/2 c ice
- Add all ingredients to a food processor and process until your desired consistency.
- Eat right away, or refrigerate until super cold!
